I would second the recommendation of Quicksilver, I'm lost on a computer without it.

Also Growl is pretty handy, as is SpiritedAway (hides inactive apps), VirtueDesktops (multiple desktops), MarcoPolo (automatic location detection and changing of network settings etc)
