If you want light flexible single piece knives then Globals are the best.

I hear great things about Wusthoff but don't have any direct experience.

My personal favourites are Lion Sabatier, nice substantial Thiers knives with a full tang and 3 rivets on the handle. Beautifully balanced, nice weight (quite a bit heavier than Globals), and they hold an edge like nothing else I've ever used. The 10" cooks knife is a beast to behold and wield.
