I asked this question many months ago...as far as I could find it is called Handel - Zadok The Priest. It is also the theme music to P&O cruises:
http://www.commercialbreaksandbeats....sp?compAlpha=p When you listen to it however, you may be a little disappointed, as the bit that is used on Champions League is only featured for about 10 seconds...the rest is weird classical ryhme! Hope that helps
