If I were you, I would stick with Ivy Bridge class CPUs. You can pick up used ones, even i7s from CeX or eBay.

Current pricing for the Haswell i7 4790K is £239 while the Skylake i7 6700K is a staggering £335. LMAO.
I can't help feeling more than a bit played here right now. You should grab yourself a Haswell i7 5820K 2011-v3 before demand for these outstrips demand for the 6700K processors at just £293.94 it seems like a much better option.
There is a shortage of 6700k. I just picked one up to replace the 4770k i have. Long story short its unstable and my mobo is faulty so im RMA and selling the new stuff that comes back. That and the fact cost isnt an issue.
The 6 core is a nice chip but but its based on old arch and doesnt clock as high. Single thread performance still king and has more impact on games than any other aspect of a CPU. If i keep it two years then it will have been worth the cost. I have more expensive hobbys which give me less fun for more cost.
I was looking into older intel setups, I'm on a cheap amd build just not, missus gave green light to upgrade, but i feel the new ones are very overpriced, even the i5k models, i don't expect that anything anytime soon will bottleneck a 2600k anytime soon and its a good few years old now
