    Sesame Prawn Toast

    Sesame Prawn Toast

    Serves 4
    Prep Time: 10mins
    Cooking Time: 5mins

    Ingredients

    225 un-cooked prawns
    25g lard
    salt and pepper to taste
    1 egg white, lightly beaten
    1 spring onion, finely chopped
    1 small piece fresh ginger, peeled and finely chopped
    1 tbsp rice wine
    2 tbsp cornflour
    6 slices of white bread
    100g sesame seeds
    vegetable oil for deep frying

    Method

    Chop the prawns with the lard until a smooth paste is formed.

    Mix in the salt, pepper, egg white, spring onions, ginger, wine and cornflour.

    Spread the prawn paste thickly on one side of each slice of bread.

    Spread the sesame seeds evenly on a large plate or tray then place the bread, prawn side down, on the surface of the sesame seeds, pressing gently so each slice has a good coating of seeds.

    Heat the oil in a wok or deep-fryer until moderately hot.

    Fry the toast, spread-side down, for about 2-3 minutes or until it starts to turn golden, then turn over and fry for another minute. Remove and drain, bread side down, on kitchen paper.

    Trim off the dark brown crusts, then cut each slice into 6 fingers or 4 triangles and serve warm on a bed of lettuce leaves.

    Chilli sauce and/or soy sauce should be used as a dip.
