Wow - I've spent 3 years playing it. It destroyed my private life but what an entertainment it provided... :-P
So many amazing games, hard to pick. If I had to pick one it would have to be Tribes. It was released in 2001. It still has a active community to this day. It is a amazing online FPS way ahead of it's time.
Civilisation (The first one). So many hours spent playing that. Sim city 2/3000 (for replayability). EQ2 for MMORPG (stunning, complex and an incredible challenge). Unreal Tournament (the only First Person Shooter that I frequently return to play). Lemmings for it's sheer challenge!

There are lot of games that are my favourites. But if I was really forced into picking one, I think I would have to say MGS: Snake Eater. I thought it was a masterpiece! Probably the only game I've ever played that I would give 10/10. Everything about it was a strong point. But I really remember the characters from it better than any other game. That bit when you're walking down that river seeing all the people you've killed crying, and you meet "The Sorrow". Ah, great game
And yes dude. I remember these games! They were brilliant Did you ever play the 3D shooter version they released??
If i had to pick it would probably be Zelda-A Link to the past on the SNES, really blew my mind as a kid with its smart game design and how it rewards the attentive player.
I'm not gonna try to justify three games, all PC, that I'd argue until I was dead were "amongst" the best.
Single Player: Black and White - for sheer genius of invention, for trying and nearly succeeding in re writing the rules on not just god games, but properly joining in with the environment.
Multi Player : IL-2 series - until you've experienced years of team work in the way only a game that devoted to WW2 aircraft can offer you it, you've not really lived online gaming. LAN parties than lasted entire weekends, where that was the only game played and where yuo are just never ever as good as the other team.. and they think the same about you.
Simple To Learn, Hard to Master: Both single player and online multiplayer: Sol Survivor - Tower defense game, so good and so cunning, so lovely and so hard.. that when I sit someone down to play it and show them... they buy it. Every time.

The original Age of Empires 2. It was the game i could always go back to if i got bored. The "HD" version of it was such a painfully bad let down.

I find it impossible to play multiplayer, and sometimes even skirmishes.
The developers excuse was that they changed the multiplayer system to Steam servers, bringing low frame rates and about 2 seconds of command delay with it. No LAN mode either, which is a shame as it would have been awesome to play at Insomnia. From what I've heard they have no intention of fixing it either.
+1 for Elite (on my Amstrad CPC464). The feeling of relief when I could afford a docking computer...
