The games I have the fondest memory for are:
Elder Scrolls IV: Oblivion - I have started this game several times, but 100+ hours in, I give up for whatever reason and never completed the main storyline... then few months down the line, start a new character.
Terraria - Lost many hours to this game. Now play it on the iPhone on the way to work.
Mount & Blade Warband
Road Rash II (Sega Megadrive II)
Civ Series - particularly Civ II and Civ Rev (which I got all achievements on 360).
Original Xcom for sure!
Probably still Baldurs Gate 2. Although I spent a lot of time playing BF3 as we had a squad of 4 most times when I was at Uni. More recently it's been Dota 2, I've managed to play way too much each week for the past couple of months.

Fable was the first game I was really engrossed by, so that's definitely up there, loved the first mass effect, but never played the second or third (and i don't know if i will)

I remembered one more....Commandos....
Unfortunately I don't think they make similar games anymore
for me its still Baldurs Gate 1 and 2 followed by Fallout 3.
Fallout 3 for me. I spent hours on that game. I've yet to find anything that comes close!

Super Smash bros (N64):
The multiplayer was the best! cannot stress enough how good this game was! even if the Single player was very repetitive...
Melee unfortunately was poor as the physics made people fall off very quick and whilst Brawl was a step towards a better overall game with SP being improved through adventure mode and an attempt at online gaming, the number of characters for me, was a detriment to the experience.
Hopefully the next SSB will be even better however
My favourite game has to be Skyrim
Has such a large modding community and Amazing landscape. It may be filled with bugs that make you mad and characters that you want to kill but cant *COUGH* Braith but has some of the 'best' voice acting and an amazing storyline. If you havent checked it out already I suggest you do
