I'm confused, somebody just said that it (the 7800GTX) doesn't support two 30" 2560x1600, but will it support dual monitors at 1920x1200 each.

That's correct. 1920x1200 is doable in the bandwidth of single-link DVI, and the 7800 GTX has two DVI ports.
