I'd try a few things:

I'd hook up my PS4 followed by my PS4 Pro so I can fully appreciate the performance increases (I bet Horizon would look beautiful! And Mass Effect Andromeda soon too!).

I'd try my XBOne for Halo/Forza.

I've got a MSI GL62 gaming laptop and I'd be keen to see how Civilization V/VI look and play on a huge screen :-)
(Waiting to see how Ryzen/Vega play out before I commit to a new full gaming rig, though the 1080Ti's do look awfully nice!)

I've been watching a lot of Breath of the Wild streams on Twitch recently (such a beautiful game!), which have almost convinced me to get a Switch, so if I do I'd try that also.

Hooking up my HTPC (HP N54L) is a given! I'd be able to finally experience having an actual home cinema.

Also, (if I can find it), I'll try digging out my Pi for some RetroPie goodness :-D

I would use my newly bought Xbox One with it! My current TV is pretty small and old so looking at the visuals produced by this beast will be amazing!

I'd us my PC as it's all I have for gaming. If I won one of these projectors though I'd probably pick up an Nvidia Shield too.

I would use it for bedroom gaming from the bed using one of two gaming PCs in the bedroom. Movies would be really good too. Might hook it up with a Steam Link too for some added functionality.

This would come in so handy at a kids group my wife helps out at, I have been reluctant to take a work one as they are all long throw and I dont want the kids knocking it off the table or burning their tongues on the bulb.

Would be nice to have a go practically with a short throw, all the ones I have used at work are long throw as we dont know how well they perform as it is always stick with what you know there. Luckily the people who work there can "probably" be trusted not to burn themselves.

Gaming wise, upscaled snes and a bit of street fighter 2 to show the youngsters how its done. Or get the new Xbox or PlayStation if the wife will let me.
