Morning all,

Being on a wheat (gluten) free-ish diet, I'm always looking for wheat alternatives. Currently I use Spelt flour for bread, but I just bought some buckwheat flour. Sally made some dumplings with it and they were pretty nice, so I've decided to try it with some white chocolate cookies.

250g flour
1/2 t spoon salt
1/2 t spoon bicarb
170 g unsalted butter
200g muscavado sugar
100 g caster sugar (I have my caster sugar sitting on 4 vanilla pods, really rich flavours now)
vanilla extract (the recipe says 1 tablespoon, but I think that's a typo, I used 1/2 t spoon)
1 egg plus 1 egg yolk
white choc chips - I used one 150g bar of Green and Blacks Organic white cooking chocolate)

Oven to 170 C, line baking trays with parchment.

Melt the butter and when cool, add the sugars and whisk till nicely blended.

Add the beaten eggs and vanilla, whisk well. Add the flour and other dry ingredients and blend till nice and gloopy. Finally blend in the chocolate.

Drop blobs of the dough onto the parchment, leave at least 6cm apart.

Cook at 170 C for 17 minutes or till edges are *just* looking toasty. Leave on baking trays for a while, then transfer to wire racks to cool, then keep in airtight tins.

I got 20 out of this batch. Recipe pinched from allrecipes.co.uk, and modded for buckwheat.
