1 tbsp lychee purée (place 5-6 canned or fresh lychees into a food processor and blend to a purée)
1 tbsp natural yoghurt
1 shot vanilla vodka
2 tsp sugar syrup (sold as 'gomme' syrup)
sparkling white wine (such as Prosecco or Asti Spumante)
1 lychee, to garnish
1. Place the lychee purée, yoghurt, vodka and sugar syrup into a cocktail shaker. Top up with ice cubes and shake well. Strain into a jug.
2. Two-thirds fill a champagne coupe with the sparkling wine and top up with the lychee mixture.
3. Garnish the rim of the glass with a whole lychee and serve.
