Christmas Cake

Can anyone tell me how long a cake can be stored for in a tin,
it has been made with Brandy, as well as all the usual ingredients.

The one in question is about 4 years old. Lol.

Erm, the shelf life, if its a ready made cake, shouldn't be exceeded. I won't go into all the ins and outs of shelf life on stuff, but you shouldn't ever use anything when it's past its best before date.

If its a homemade one it really depends on the recipe and whether or not its had any booze poured into it.

If the recipe was quite high in sugar, ahd a decent bit of spice in it,the cake was fully cooked and had a bit of high alcohol percentage booze poured on it before going in the tin it should be ok.

The risk here is of something like botulinus bacteria growing, which wouldn't show up as mould or anything and is also odourless. Pouring more booze on it now may well kill other active bacteria but that won't get rid of any toxins they have produced while living in the cake. ( btw, it's the toxins produced by bacteria, not the bacteria themselves that usually make you ill)

Personally, I'd play it safe and bung it.

My parents make theirs just before Xmas for the Xmas the year after. That way they are always a year old and are always flipping lovely!!

4 years is a bit too much...

i wouldnt touch a tin of summit that was 4 yrs old let alone a cake! mayb im too careful. but then again ive been known to eat out of a bin before so what should i say! lol

Well, xmas cake is similar to wedding cake, and one layer of a wedding cake is kept until the baptism of the first child, four years seems a little short to me in that context, maybe you should let it mature a little longer!

Its looking as though you won't be having a slice.

The cake in qeustion was home made by my Daughter I believe it was given
a liberal dollop of Brandy, also it has been kept in a Cadburies Roses Tin.

The reason for not consuming to date was because my Wife was diagnosed
as being Diabetic, so I did not bother with it.

Recently I thought I could always eat it by myself as see it go to waste,
hence the question, would you think it would still be edible ?.

Incidentely its iced all over, and plastic wrapped, the Icing is still pure white,
no discolouration whatsoever.
