    Talking Just made a brill snack

    Was skulking around the kitchen looking for a snack not sure what to have.

    Poking through the fridge I had some chorizo sausage, Pancetta (bacon bits), half a bag of spinach in need of using and some mushrooms. So I thought I'd smash it all together to make something in an experiment

    Chopped the chorizo and shoved it in the pan with the bacon and fried to crispy followed by the mushrooms to get the lovely juice soaked up. Tin of chopped tomatoes on top with the spinach followed last. Bit of garlic and pepper with some "Italian seasoning" mix herbs in there and a bit of grated mozzarella to finish.

    Must say it's rather tasty, even my biggest critic (my brother) likes it

    The scariest thing this is almost healthy stuff

    I was being lazy for a quick snack so didn't do any pasta but would work well

    I generally use a recipie akin to that for most of my cooked meals, meat + chopped tomatoes can be turned into most styles of dish by changing the spices and herbs that you use.

    Best investment I ever made was getting a decent spice rack and keeping it well stocked, along with Worcestershire Sauce, Soy Sauce, a decent mild Chilli sauce (mild because if I want a kick I'll use a lot more chilli powder) and tomato puree.

    I fold for Hexus, do you?

    not a bad fridge-raid tbh good basis for lots of things, including a lovely pizza topper

    Put that mixture on bread, then grill the mozzarella over the top for mini meaty bruschetta pizzas.

    I always keep a stock of canned tuna, canned tomatoes, tomatoe puree, onions, garlic, balsamic vinegar, olives, capers, anchovies, oregano, Matilda (my basil plant) and pasta for such incidents. Twenty minutes for a decent meal with low cost and effort input.

    I've never tried a pasta sauce with spinach so far. I'll give it a shot at some point.

    I had something really similar to this last night, cept I used onions and green peppers with spinach and bacon. Bit of basil, oregano, tiny bit of cayenne pepper, bish bash bosh!
