    Why do I cook vegetables?

    Carrots, mushrooms, cabbage, peas, broccoli, cauliflower....

    why do I cook them?

    it's utter madness....they are so SO nice raw!

    I deliberately kill the vit c with heat, soften the things, lose some of their taste, AND warm the planet doing it.

    Anyone know why?

    Speaking of carrots, woman at work brough carrot sticks in for a snakc, I think I ate most of them.

    I prefer my veg cooked sometimes.

    e.g. I prefer soft carrots in my pies and cauliflower hot so the cheese melts on it.

    I also think it's cruel to eat veg alive, it's more humane dumping them in boiling water and then consuming them once they've died.

    Lets face it, lesagne would be pretty rubbish if you cooked everything and then sprinkled raw peppers into the sause.

    As already mentioned, some veg are better cooked (but in my books, only just cooked... still Al dente plz)

    I don't like the taste or texture of cooked veg.

    My family now do me a little pot of raw veg with my sunday dinner. Some things need cooking though.

    Raw: Carrots, Swede, cabbage, cauliflower
    Cooked: Green beans, leeks, potatoes (obv)
    Peas are a funny one, can eith them either way, but have to be cooked with mint (pinty meas!)

    Raw sweetcorn (except baby sweetcorn)... yuk.

    Most root vegatables taste really good when roasted, just to the point where the sugars start to caramelise...

    Light cooking in some cases makes them easier to digest. I always use what water is left to make gravy with.
    Plus it's true, some veg, such as asparagus, swede, turnip, parsip, sprouts taste better for it. Finely chopped sprouts add a great flavour to any stir fry. Poles apart from their taste if boiled, much sweeter.

    I love carrot raw but hate the taste of it boiled. Some veg can be a bit woody if it's not boiled up a bit though.

    Plant cell walls are made of cellulose, which is very difficult to digest which is why we cook things, break cells apart allowing the goodness to be extracted in the gut more efficiently.

    Having said that raw veggies are nice!!

    Carrots are nice, broccolli stork is scrummy, raw mushrooms with salt and worcester sauce are to die for sometimes!!!
