Things to do with chicken (the meat, not the hexite)
Just wondering if you've got any ideas for sauces / rubs to go on chicken. To be eaten with salad.
I've got loads of chicken (was reduced, so I bulk bought!) in the freezer and I'm on a bit of a diet at the moment so they need to be relitively low-fat ideas (or easily convertible) (I'm trying the kellogs kick start diet thing, 2 bowls of cereal a day with a balanced meal for the third.) I usually have fajita and thai curry sauces on the go which I love, but looking for something else. any spice mixes that you can recommend? |

I find tomato puree, worcestershire sauce and the Shwatz italian mixed spice makes for a good mix on chicken.

LEMON sauce.
Some stock, a bit of butter, couple of lemons juiced and a bit of zest and my secret ingredient sesame seeds a tiny bit of flour (less than 25g) (the sesame seeds takes some of the thicking work) About 5 minutes of simmering after the initial bring to the boil stage. TiG |

A bit of a diet, not a massive ZOMG i've gotta lose 4 stone in a day. Just lay off the beer and takeaways for a bit, eat a bit healthier and try and get my moneysworth out of the gym. A positive lifestyle change if you will. There are pictures of me on facebook, that are NOT me. I don't like them and I'm making positive steps towards fixing it. Also it's summer coming up, and it's not so easy to hide the bits I'm not happy with! Tiggerai master of disguise. |

something really quick is...that Schwartz (sp?) spices, the BBQ grilled chicken one - sprinkled over both sides of a skinless breast fillet (rub some olive oil on it first, maybe a lil lime or lemon juice). then stick it on a george foreman grill for abit!
quick, quite healthy if u grill it. and taste nice. |

Lazy lazy Thai Curry
Chicken (or King prawns) Red Thai Curry Paste (or green) Low Fat Coconut milk Mushrooms (optional) Red/Green Pepper (optional) Basmati Rice Brown chicken, or warm prawns in a pan. In another pan add heaped tsp of curry paste with coconut milk, gently heat until all the paste has dissolved into the milk. Add to meat/meat and veg and cook until the sauce has reduced slightly. Remove from heat and leave to stand while you cook the rice, as the rice is finishing put the curry back on the heat until piping hot again. Serve and chow. Whole lot should take no more than 20 minutes, usually with plenty left over for lunch the next day. |

I find his to be rather good, works best with chicken thighs
Chicken with skin on (has to have the skin on) Little bit of olive oil Salt Tomato puree rosemary/thyme/other 'erbs basically stuff the inside of the skin with the puree/herbs with a little salt, lightly brush the skin then stick in the oven Lovely with pasta and some salad, esp a tomato based one |

![]() I'd go for Cougarslam's suggestion of Nandos sauces, otherwise try any Pasta-stir-in sauces or Pestos (straight on the chicken), or you can buy just straight sun-dried tomato puree in those little tubes like the garlic/chilli purees come in. Having recently had the pleasure of some barbecued Reggae Reggae Sauce coated chicken I can highly recommend it.
