    Piadina - What to have as filling?

    I got the simple recipe for making Piadina and right now, looking for what I can use as filling. I'd like to try and remain Italian yet I must be able to make a vegetarian version too. The italian guy I talk to doesn't speak english that well...the most I got out of him for Piadina filling is "ham". lol. Oh and another guy suggested Briacole (spelling is probably horrendously wrong...) but that looks difficult to make.

    Ideas can be simple through to making proper ragu

    Piadinas are usually sold immediately after preparation in specialized kiosks (called piadinerie) filled with a variety of cheeses, cold cuts and vegetables, but also with sweet fillings such as jam or Nutella.

    Ahh yes, I remember seeing that wiki page before.

    It's not a bad starter but am quite intrigued how to make some of the more exotic looking piadinas you can find images of.

    I'll start cooking it at some point and let you know of the results if anyone is interested.

    Given that bread is my staple food, I'm surprised that I hadn't heard of this until today. If you're still looking for inspiration, Google returns loads of good links with "piadina recipe" and has everything from the aforementioned Nutella through vegetables and cheese to... ham. Basically, it'll take anything that you like.

    Just remember not to use lard as shortening if you're making a vegetarian version! If you are making a vegetarian version, I'd certainly like to hear about it - including what you used to make the bread and what fillings you used.

    I have a person in mind that I can ask about this. He's very well qualified on two counts (one being that he's Italian!) and if he has the time, I'm sure that he won't mind offering tips and info.
