Ok, so today I only had a few things in my cupboard and couldn't be assed hitting the shops.
Surveying my options, I notice quite a few onions. My gf made an awesome onion soup a few months ago and it was very tasty so I thought I'd base my meal on that.
Ingredients -
6 medium to large onions
large knob of butter
2 bay leaves
1 veg stock cube
dash of chicken stock (I had some of liquid kind in my fridge)
good helping of cracked black pepper.
dash of lea and perrins.
Noodles, whatever kind you like.
Melt your butter in the pot under a low heat.
Take your onions, peel and chop roughly, and chuck them in the pan.
Chuck your bayleaves and chicken stock in, along with your pepper.
Let that melt together, til the onions go translucent.
Boil a kettle and dissolve your stock cube into enough water to half fill your pot, and pour it into the onions.
Cook for 2 hours or until until liquid is reduced (on gentle heat)
Boil the same amount of water again, and pour in.
Put the noodles in, and leave til noodles have absorbed most of the moisture.
Serve, (with crusty bread if you've got some) and enjoy.
