    Quick and easy meals?

    Looking for some ideas for quick and easy meals to cook in the evening. Don't mind spending 20 minutes cooking, but coming home late from work, don't want to wait more than an hour and eat after 9PM.

    Most of my weeks meals seem to be one of those (listed at the bottom). Frankly I'm getting a bit bored of it. Wife doesn't like vegetables too much but will eat them if smothered in a sauce.

    Anyone got any suggestions, I'm not keen on red meats/mince etc.

    Current meals:

    Pizza (pizza base, jar of sauce and range of vegetables on top).
    Jacket potato with something (usually chicken breast in bread crumbs).
    Macaroni cheese (with bacon and toms thrown in)
    Fish (griddled salmon or similar) with cauliflower and potota bake.
    Curry (nearly always chicken based with a jar of sauce and some extra bits and bobs thrown in).
    Chicken in Black Bean sauce with noodles.
    Pork stroganoff (Pork, mushrooms and a campbells double mushroom soup with lashings of white wine).
    Vegetable lasagna (but never gets made because of the time)
    Spag Bog (sauce mainly out of a tin)
    Pork chops (spread with whole grain mustard) with stuff
    Pasta (usually from a jar)
    Chicken Fajitas
    Enchilladas (same a Fajitas just a different sauce and wrapped before putting on plate).
    er - that's it.

    Sweet Chilli Chicken Pitta breads?. Add lettuce or whatever veg you want. Quick and easy. Pretty adaptable to whatever tastes you want.

    A lovely steak with chips and onion rings with a peppercorn sauce

    Fried rice? just boil up some the night before, drain it with cold water when its still got a bit of bite, then leave in the fridge overnight. Just cook some finely chopped chicken or whatever in a wok/frying pan when you come in, add a bit of curry paste or whatever and then throw in the rice/frozen peas or whatever else you want, cook it all through (2 or 3 minutes on high) then add a couple of beaten eggs (with a bit of sesame oil mixed in) about two imutes before the end.

    The rice cooks a lot better for being left in the fridge overnight, just don't let it get soft when you cook it.

    beans on toast, but add curry paste and sultanas to the beans.

    Pizza, but add extra pineapple, or extra onions with a bit of olive oil.

    Sharwoods Balti and oven chips.

    always finish off with cherry pie and custard or vanilla ice cream tho.
