You can make a varieation with vinegar if you wish using cider or rice vinegar. Try red coleslaw using red cabbage, carrott & red onion. Traditional coleslaw is just white cabbage, carrott, onion with mayo, a pinch of mustard powder & a healthy dose of fresh ground black pepper. But like any good salad the variations are endless, and tasty

Low fat mayo??? are you mad?
![]() I always use a cap full of white wine vinegar. This helps taste and reduces the amount of mayo you need. Then you can use a good mayo rather that low fat (low taste) mayo. And yes, IMHO onion is essential and I wouldnt put green pepper in either. Just carrot, white cabbage and onion. Oh and to answer the question, I would think freezing and defrosting would destroy the structure of the crisp vegetables. Sorry
