Roasted Butternut Squash Soup.
I was making a roasted vegetable medley to go with our toad in the hole with new potato, butternut squash and carrots and i realised that there was a fair bit of flesh left attached to the thick, stiff skin of the squash.
I had cut the squash into eighths and used a sharp knife to cut away strips of flesh but some adhered to the skin. In a moment of inspiration i popped the slices of skin onto a baking tray, brushed them with olive oil and stuck them in the oven at 200 for 15 minutes. When I took them out it was easy to remove the flesh from the skins with a spoon and I chopped them up quite finely, I ended up with about 3/4 of a cupful. Here is what I did then: Half an onion chopped chopped butternut squash knob of butter 2/3 pint vegetable stock made from cubes. 2 teaspoons honey teaspoon dried basil 1 clove garlic I sauteed the onion in the butter in a deep saucepan for a few minutes until softened, then I added the squash and gently fried for 3-4 minutes before adding the garlic which I crushed and roughly chopped and the dried herbs. I let this cook for a further 2-3 minutes and added the honey, I let this heat through for another minute and added the stock. I turned the heat right down and simmered for 20 minutes before serving. It was absolutely delicious, in future I would however reduce the amount of garlic as it tasted a little too strong. I am going to be making this in batches and freezing for during those frosty winter evening. Scrummy |

We had Patatos and Butternet squwash with a bit of olive oil on roasted around the chicken the other day, umm that was noice. its a loverly veg to roast, or in soup.

I did roast parsnip, pumpkin and carrot soup the other day... that was yummy too.

We put roasted peppers into ours. Nice, sweet and smoky. Cumin really goes well with butternut squash, sprinkle whole seeds over it before you stick it in the oven.

Considering it s Haloween, another good reciepe for now is this. Even for ME!....
Just made this soup and its blooming gorgeous but i added some cayenne pepper from OiD's pumpkin soup reciepe... A worthwhile reciepe bump though ![]() TiG Yes Zak, TiG really eating vegetable soup!. (a rushed picture to prove)

Woah!
This is also good with some red lentils and chickpeas chucked in and then throw it in the blender, makes it a bit more substantial. Dried chillies are a must this time of year. |

I mean....this summer he accused Sair and I of not teling him about Salad Dressings, cos he'd never eaten a lettue leaf in his life until he fel across them ![]() Seriously though....there's a pumpkin in our kitchen, awaiting the Soup treatment...but I DO need to get enough time to make it first

I'd like to add to this Soup thread a little.
If you have a small blender, with microwaveable jugs, here goes. Celery. 1 stick Stock cube (chiken or vegetable) one quarter of it water to cover the celery Stilton, one chunk Chop celery into bits, add water to cover in a small container, and microwave for 3 minutes. Add quarter of 1 stock cube, and bitz with blender. Add stilton, and microwave for 30 seconds Blitz Serve. I kid you not./...soup for 1 in under 5 minutes, healthy and fresh as a daisy
