Home made pasta recipes
And i mean the actual pasta, not the sauces.
We got a pasta machine recently (funnily enough a cheapo one unlike said in the thread about them). The recipe for pasta in that didn't work out too well (mind you it was the first time). So i wonder if anyone cooks own pasta a lot and knows the best ingredients and procedures.It would be extra awesome if someone was able to give a good noodles recipe too. noodles!Thanks. ![]() Tough on mirrors, tough on the causes of mirrors. |

500grams of "00" flour
4 whole eggs 8 egg yolks(makes it richer and better) Either mix it by hand or in a food processor. It should be crumbly when done(almost a bit like breadcrumbs. Then press it together and keep working it until it becomes a smooth roundish lump. Once it's made though, you need to wrap it in cling film and leave it for half an hour in the fridge. This makes it more pliable. Cut the resulting dough into 4. Then either press it flat by hand or with a rolling pin. Take it through the machine slowly making sure to straighten any creasing up. Keep going(flouring very slightly on each run through to stop it sticking) taking the thickness down each time until at lowest setting(starting at thickest setting). Then make into whatever you want(spagetti, taglatelli, ravioli etc). It only needs about 3 or 4 mins(variable depending on style made) in salted water. Saw this on a jamie oliver prog recently.
I do know everything, just not all at once. It's a virtual memory problem.
