    Soup

    i'm currently on the look our for some decent soup recipes, i buy fresh soup from Tesco's everyweek but now its time for me to have a crack at making my own.

    Does anyone have any good recipe's knocking about? Preferably vegetable based rather than something like chicken

    Lentil soup is sooo easy to make - and if you make it really thick it's a whole meal in itself lol

    im not really a lentil fan to be honest....

    Steve B - if you could post that would be awesome, carrot and coriander is my all time favourite

    my two favourites. I like making lentil, so easy. but i end up making far too much and get a little sick of it by the time i'm finished the batch :/

    My favourite is "Contents of the Fridge" soup.

    Basically any vegetables that have gone over a bit (bit soft but not mouldy, bendy carrots etc) that you wouldn't eat fresh, Boil up in a big pan until soft and whizz together with a couple of oxo cubes.

    Had it this week, mainly carrot with celery, cucumber, spring onion etc. Cucumber soup i hear you say.... surprisingly good.

    Leave on stove in big pot and boil every day adding any other random veg and some water as you go along. Nutritious and cheap!

    Didn't have a freezer until recently. Shocking but true!

    Got into a conversation with a friend that went something like this (while flicking though a electrical retaler flyer from a paper):

    Her: mmm, i'd love a big plasma TV
    Me: I've got one.
    Her: cool. we've got one of these huge chest freezers, bet you don't have one of them!
    Me: i don't have a freezer
    Her: what?!?!?!?!



    Now i have a freezer compartment in my fridge, but i don't have a worktop or any plumbing in the kitchen. oh the joys or renovation....

    This recipe started life as vegetable puree for my daughter when she was a baby. We had a terrible time getting her to eat shop bought baby food so we had a go at making our own. It turned out to be delicious (she loved it) and just needed thinning out a bit to make really nice soup.

    Vegetable soup (cooked in the oven):

    Ingredients:

    1 tablespoon olive oil
    1 oz butter
    1 medium onion, finely chopped
    1 - 2 cloves garlic, finely chopped
    2 leeks, trimmed, washed and finely chopped
    2 carrots, chopped
    2 large sticks celery, finely chopped
    1 large sweet potato (about 6 ounces), chopped
    1 ounce plain flour
    1 pint good quality chicken or vegetable stock (I use that Swiss Bouillon powder).
    A handful of chopped fresh parsley, stalks and all
    I don't add any salt if using shop-bought stock.

    Pre-heat oven to 160 deg C.

    In a large casserole dish heat the olive oil and then melt the butter. Bung in all the vegetables, adjust the heat so that they're sizzling gently at the bottom, give them a good stir, put the lid on the casserole dish and let them fry/steam for about 10 - 15 mins. Take the lid off, give them another good stir and then continue cooking until they've softened a bit (not critical). Stir in the flour and cook for 5 mins, stirring all the time. Add the stock and parsley, stir and then put the lid on and put in the oven for about an hour.

    Remove from oven, check to make sure the carrots are nice and soft (they take the longest to cook), allow to cool a bit, then blitz in a food processor to your desired consistency. If too thick add a bit more of the stock.

    Leek and Potato (always great, but this one involves dry frying indian spices with the leeks first)

    potato soup is really nice

    potato soup recipe
    * 6 potatoes, pared and cut in 1-inch chunks
    * 2 leeks, washed, thinly sliced
    * 2 onions, chopped
    * 1 carrot, scraped and sliced
    * 1 stalk celery, sliced
    * 4 cups chicken broth
    * 1 tablespoon parsley flakes
    * 1 1/2 teaspoons salt
    * pepper
    * 2 tablespoons butter
    * 13 ounces evaporated milk (1 can)
    * chopped chives, for garnish

    PREPARATION:
    Put all ingredients except milk and chives in slow cooker. Cook on low 10 to 12 hours or high 3-4. Stir in milk in last hour.
    Serve topped with chives.
