For a Rogue I'd go with Skinning and Leatherworking so you can make your own eq, and make some money on the side or for other guild members.
If cars had followed the same developmental path as computers, a Rolls Royce would cost £60, get a million miles per gallon and explode once a year, killing everyone inside.

Yes, I chose those professions for my rogue. Either that or Herbalism/Alchemy to make your own potions is good. Or you could chose two gathering professions (skinning/herbalism/mining) then sell the resources.

That's what I did with the Tauren, he's got herbalism and Skinning. The herbs I normally send to Pug, the leather I normally send to Lurch, my leatherworking character.

You can have First Aid, Fishing and Cooking, they are secondary professions. It's only the primary professions you have to choose 2 of.

You can have as many secondary professions as you like.
"Well, there was your Uncle Tiberius who died wrapped in cabbage leaves but we assumed that was a freak accident."

If you want to be self surrporting then Skinning, Leatherworking, and First Aid is a great choice for a rogue. You can also take up Fishing and Cooking as well if you like
