I've always wanted to fly a WWII US Navy Corsair - love the look of them, and told they handle incredibly well. Obviously I'd then have to fly a Spitfire for benchmarking purposes, but the Spit for all it's brilliance prob wouldn't be able to thunk onto aircraft carriers in quite the same ferocity.
More modern planes, Concorde obviously, SR71 Blackbird, Harrier, B52, Vulcan, shoot there are too many. What about Ekranoplans or The Spruce Moose???
