From a number of leaks, the GP106 is meant to have the following specs:
    1.)1280 shaders
    2.)Either a 192 bit or 256 bit memory controller
    3.)Around 200mm2 in size

If this clocks to 1.6 GHz base / 1.7 GHz Turbo, we're look at 1280*2*1.7=4.35 TFLOPS.
Should be okay for 1080p VR.

Even if Polaris 11 is 1280 shaders as well, it likely won't clock as high. OTOH P11 is going to be fairly cheap.

    No way it's 8 GB.

Could be an interesting card though, If it gets 970 performance with a solid 4 GB VRAM and Pascal's efficiency... could be very interesting.

Because it is a price sensitive segment of the market, so if it adds just £30 to the cost of a card then that would need a serious jump in benchmark scores to justify which it won't get.

It might be nice if there are 8GB options available, and 4GB base. In the same way that currently you get 4GB option and 2GB base.

Actually I'd argue it's in a price and image/big numbers sensitive segment - 8GB!!! on the box is worth more than a 3dmark score that many buyers wouldn't understand. But I think you're right, we'll see cards with different amounts.
