    Glamorgan Sausages

    Glamorgan Sausages

    Prep and cook time: Up to 30 mins

    Serves: 4

    Ingredients
    1 large onion, diced
    25g butter
    225g fresh white breadcrumbs
    1/2 tsp dry mustard powder
    2 tbsp freshly chopped parsley
    100g Welsh cheese such as Caerphilly, Y Fenni, Tintern, crumbled or grated
    salt and freshly ground black pepper
    2 large eggs, beaten
    2 tbsp plain flour
    2 tbsp vegetable oil

    Method

    Melt the butter in a small frying pan and gently fry the onion for 3-4 minutes until just softened.

    Transfer to a bowl and mix with the breadcrumbs, mustard, parsley, cheese and seasoning.

    Bind the mixture together with the beaten eggs.

    Divide into eight and form into sausage shapes or small patties.

    Lightly roll in the flour.

    Heat the oil in a frying pan and gently fry the 'sausages' or cakes for 3-4 minutes on each side until golden brown.

    Drain on kitchen paper and serve immediately.
