    what size.....

    holesaw would I need for a 60mm fan

    a 57mm or a 54mm?

    does it matter if I cut a 51mm and fix a 60mm to it?

    If the hole it too small you'll end up with turbulance.

    I'd expect it to be a 57mm hole to be honest. Of course, you could cut a small hole if you don't have a big enough holesaw, and then widen it some more by other means... probably won't end up as neat though.
