Surely the biggest problem with multiple monitors is the bezel?
And while on a 1x3 setup, it is annoying to have them at least your centre monitor is right in front of you. While on a 1x2 setup the bezels would be right in front of you. 1+1+1 with one wide screen and two normal 1080P screen where the wide screen is in the centre might work, but in any multi-monitor setup you'd want the screens to have the same viewing angels, colours and black levels.
Depends what you are doing, right now I've got a gap of about 4cm between two of the panels to get the curve I wanted.
Now as I never 'stretch' something across more than one, it's not a problem. One continuously large enough panel and the gap between them becomes less relevant.

For gaming in particular 2 monitors spanned is annoying. even the really thin bezels are thick enough that it would annoy me, although I suppose YMMV.
If you could get them matching properly then an ultrawide + 2 normal is probably the best solution, but you're talking about some serious hardware to drive it.
3 monitors otherwise you'll have the bezels right down the centre where your crosshairs would be.
As to the bezels - you adapt quickly ask anyone with glasses, a nose or drives a car
