Suitable CPU for storage box and transcoding

I'm looking to build a storage box that will need to be capable of transcoding video, but only for 1-2 users.

A ready made NAS ticks that box, but building your own box always gives you more flexibility!

Can I get away with a cheap and cheerful Pentium Gxxxx or a lower end Athlon or A series AMD or will these struggle for transcoding?

They should be fine spec wise, but for future-proofing i.e. more intensive transcoding or more users, then look at a low end FX series or i3.
