Carmageddon 2. I just long to see that with graphics as good as Grid.
And Crimson Skies. One of the best online flying games there's ever been but it won't run on modern graphics cards. Some incompatibility or other.

Personally I'd love to see remakes of Paradroid 90 and Projectyle for PSN. There was a next-gen version of Paradroid in the making a year or two ago, but it seems to have vanished :/ Projectyle was just so much fun with a couple of mates, seems ideal for a cheap online multiplayer PSN or Xbox Live game.
Still waiting for Elite IV also ...
