Need some help with Viva Piniata

Ok so grew a apple tree, been there two days no fruit, planted 2 hazelnut trees, first one grew a bit after watering and had what looked like hazelnuts on it so hit the tree, they fell off, woudlnt let me pick them up and after about 20 seconds dissapeared.
Second tree grew higher as a watered it, tapped it for the hazelnuts and again coudlnt pick them up and they disapeared.
What am I doing wrong here?

    Thanks

Let the tree drop the fruit/nut by itself, if you smack it with the shovel you're making it drop before it's ripe and thus some disappear.
