If you were trying to introduce someone to gaming, I'm thinking you probably wouldn't start them off with Demon Souls and Postal. So what would you recommend?

An MMO might be a big step but if the game has a good community then that could be a real ice breaker.
Racing games like Burnout or even Forza, (if they're into cars).
Any game which corresponds to one of their hobbies like football games, golf or fishing...
Also Halo? I'm not joking because I've noticed that for many of my friends the ones that don't play games normally, for some reason, actually enjoy playing Halo. Even my friend's 9 year old little sister's favourite game is Halo and she has the Sims and all kinds of games for their DS. For some reason (must be the colours and huggable aliens) lots of people just enjoy Halo...

Worms World Party! That would be a great choice. And yeah those lucasarts games are brilliant, pity about the old graphics though. The monkey island games are getting spruced up at the moment but I don't think they have aged very well imho, and I don't think they are that suitable to older peeps.
I think some arcade racing games might be good. Maybe something like that modern remake of Outrun or something.
Hmm what else..
Oblivion would probably be a good one because it's pretty straightforward to play, and it's pretty. And maybe you could try a simple RTS. Supreme Commander 2, or Red Alert 3, or if they are a bit too fast and difficult, you could go super old school and get one of the early C&C games and they could build up from there.
Streetfighter 4 might be a good one too if they can play it on the very easiest mode to get used to it. Besides that I can only think of arcade games.
Audiosurf... if they like music.
