Depends what you want from it. For realism:
Civvy MS FS2K4, X-Plane 8
Mil jets LOMAC, Falcon 4 with 1 of the latest BMS or Free Falcon patches
Mil props Il-2 series

These all have a steep learning curve - you don't pick them up & 5 minutes later are the world's best

You could borrow all the flight simmers from friends and then decide for yourself...

Probably Falcon 4.0 with the 1.08 patch, SP4, SP4.1, BMS2.0, HiTiles and some high-detail cockpit is the best flight simulator ever. That's some serious downloadage and configuration and think BMS2.0 is illegal however.

I was thinking of getting my mits on Falcon4.0 but have been reading the fans webby's and stuff.. my god it looks like just plain hard work :/

It is, but omg for unparalleled avionics, unparalleled dynamic campaign, unparalleled story for a flight sim and unparalleled almost everything else such as radio comms, radar and ground radar and the like.

Not to mention you can click, switch, push and turn every knob, switch, button and dial.
