I know this is a large can of worms, but whats a graphically stunning game out at the moment. nothing to do with game play purely graphics.

Doom 3 alpha?
Half Life 2 and GT4 are looking beautiful
Screen shots of the doom 3 alpha look stunning but i havnt seen it moving myslef so i couldnt say
I think Tron 2.0 looks amazing. Not forgetting when the movie was released there was no chance of it running on a home PC at all.
none of doom3, hl2 or gt4 are out atm so they dont refer to the question.
Unreal2 is very nice graphically, halo after the first 2 levels.

splinter cell the ut2003 engine in general can create some lovely effects, but the shadows and (especially) night/heat vision in SC are amazing, I was shocked the heat vision ran so well!
mgs2 still does it for me, followed by splinter cell and gt3

doom3 alpha has nice textures but if u observe the models palettes and the shadowing is very incomplete for the most part and its not officially a game, that may not not even feature in doom3 in the end and its not legal or officially released, they may be slack about it now but not at the time.

Id say the Nature benchmark in 3d mark 2001SE. I was truely blown away by the graphics on that when i first ran it....

the reason is i have to display the AMD XP chip to some clients and they always like my games i normally take to show them, so I need to buy something that just hits the mark
It'lll have to be the Alien city levels of Unreal 2, you know, the robot world ones?
Or, for mahoosive draw distance, Morrowind, tho it suffers REALLY badly with even 2x antialiasing in the framerate stakes.
Of course, I could be completely biased and reccomend IL2 Sturmovik: Forgotten Battles. At 1280x960 with 4xAA that game looks the mutts nutts!
Actually, if you skip the fact that it's not a game, for sheer graphical oogleness there's a realtime HDRI lighting engine that's pretty good for wow-ing punters
