    Defrosted frozen goods....

    So, I bought some mini-pizzas and tattie wedges from Asda at Lunch, with the plan of them being my tea tonight, but they're sat in my car...by the time I get home, they will certainly be totally defrosted...will I be ok to cook 'em d'ya think?

    Haha, of course! Just follow the cooking instructions from non-frozen. Most things you'd have to defrost anyway before you cook them!

    I'm sure they won't kill you... it's not too hot today! (good old British summer )
    The official rule is the things are allowed to be out of chill for up to 4 hours, and it would have taken them a good few hours to defrost. Anyway, you will be reheating so will be fine... just adjust cooking time if there are no "cook from defrosted" instuctions on the packs or you will end up with a few cremated offerings!

    Just do not freeze them again.......else you will run a risk of nasty bugs.

    IMO, most frozen food tastes a bit better when it's defrosted before cooking.

    It has actually been a lovely day up here though. I can quite imagine Kidzers car getting very toasty is it has been sat in the sun

    I know mine was like a greenhouse earlier.

    Quite, I Was parked 1 space too far away to catch the shadow of the building in the afternoon, so I got all 'greenhouse car' too!

    Why does defrosting and frosting again and then defrosting and cooking cause problems with bacteria, where perhaps defrosting for the same length of time (but without refreezing) does not?

    well chap, dead interesting question.
    There are LOT OF PEOPLE who have got away with doing it, and many who are less satiied with the time they've spent on the bog

    At all times for fresh food, in a fridge or at room temperature.. bacteria is growing. It's SLOWER in a fridge.. cos it's cold, but it's not stopped.

    When you freeze something almost all bacterial growth stops. At least it does in a proper freezer.. not the little ice cube thing at the topof a fridge.. they're only good for short term freezing.

    But... when you defrost food, the bacteria begins to multiply again, and it happens very soon after it comes out of the freezer and as different parts of the foosd defrost at different speeds you don't know how much has grown.

    If you refreeze it again.. it's still been out of the freezer all that time and has grown a load more bacteria.

    Freezing ALSO removes moisture, so the food becomes a lot less nice to eat. And you can't always cook from frozen, so you HAVE to let it defrost again and then.. the bacteria are growing wile it's defrosting.

    What yuo CAN do is to remove something from ther freezer for ther first time,, let it defrost.. then COOK it and refreeze it if you don' tneed to use it.

    Cooking.. good quality, thorough cooking, kills most bacteria.

    So if yuo get something out of the freezer, is defrosts and then you don't need it.. cook it into something and then refreeze and you can defrost and reheat it to eat again another time.

    Buit don't do THAT more than the once cos the bacteria is growing again.....

    Surely it doesn't matter how many times you freeze/defrost it as long as you cook it thoroughly before you eat it (rather than just warming it up), because the cooking should kill the bacteria in it anyway. That's what I go by anyway.

    Thanks for answering that - I presumed this was the case but was hoping someone would clarify my understanding; so thanks

    Some bacteria create poisons which are not affected by heating, so the more you defrost / cook / freeze it the greater the concentration in the food. In fact some of the most lethal food poisoning illnesses are caused by them.

    Whilst not all foods will contain these types of pathogens in them, it is a good rule of thumb to not do this with any foodstuffs. That way you avoid the risk.

    Heat to above 75degC, 83degC in Scotland, especially if reheated. A decent digital probe can be bought for about £15 in most cook shops on the high street, much less online.

    Be especially careful with any kind of poultry, fish, or dairy products.

    Sair33, I've always been taught 90 minutes, would love to be proved wrong so I can stick it to the EHO's though.
