Bindi, the rice goes in raw. The onion should be dice small as the rice grains so as it cooks it'll rend down and flavour the risotto.

Done a cookbook yeah, but was under the Exec chef's name.

Best wok for stir frying is black steel, non stick woks are good for stir fried rice but not much else, you cant get em hot enough.

if you want nice onions fry them lightly in butter and add sugar until they go a nice golden colour, you need rougly a table spoon of decent sugar and full fat butter (not that funny flora stuff)

vegies are good when done this way.

in fact a really nice starter is runner beans [often called squeeky beans] lightly fried with sugar and seseme (like the street with big bird) seeds. add enough sugar to caramelise them onto the runner beans but be careful they'll be very hot once done. make sure you have enough butter initially and don't burn them. you'll know theres enough of everything when youdon't have an excess left over.
