That looks like an intentional wing rock rather than a windshear recovery...
I recall being diverted on a flight into Gib, you get some really odd effects round the rock itself.

The plane was eventually diverted to Malaga, but I doubt was diverting at that point.
Planes often have to have two or three attempts to land if conditions aren't great.
Not sure if relevant, but here's a video of a landing at Gib (by a different plane) from the same direction (some times they land from the other direction, depending on conditions):
