    5000 posts... is that something to celebrate? Not sure. Coincidentally I'm having cake. Feel free to use this as an excuse to also eat cake in a quasi-virtual celebration. The diet can continue tomorrow.

    Yesterday I saw someone make a lemon drizzle cake with mashed potato instead of flour.

    And it worked. It worked well. n fact it was better than flour.

    I love finding out new way to make cake!!!!!!!!

    Interesting... I'm sure we're all familiar with potato in breads, but this is the first I've heard of it in cake. It does sound gluten free, and I'm allergic to gluten free foods, but I'd give it a try if I didn't know...

    My wife made her uncle a cake using beetroot, as he's diabetic. It was a red velvet cake. I didn't try it as I loath beetroot, but by all accounts it was delicious.
