looked like a well trained pilot and instructor, went through the engine failure checklist, got it straight and level and ejected...

You can hear one of the crew (probably trainee) hyperventilating but still managing to keep it together. The instructor did a superb job of keeping things cool during a pretty bad day at the office. Bet the bird wasn't too impressed.

Yeah I saw that last night - very cool, but that same pilot was in a Seaking that exploded a few years back - the footage was incredible

It's training, pure and simple.
As the pilot in the group (knew I'd be able to slip that in ) I can tell you that the number of practised engine failures done in training even for a basic ppl really drills the routine into you. Of course, different aircraft have different routines, but the 'when something go's wrong, you have a job to do' part is the same.
Man they were unlucky. That single bird went from top right to bottom left and into the left side air-intake which on a Hawk ain't that big. A foot or two either way and it wouldn't have got injested. The Adour engine is reletively small and more susceptable to a flame out on bird strike.

Only E-3B Sentry that the USAF have lost was at Elmendorf AFB, Alaska to multiple (31? ) bird strikes on take-off losing both port engines. It rolled to port and crashed two miles from the runway.
With full fuel for a 7 hour mission not a lot was left - all 24 crew died .
