My mp3 player records off the mic socket at 128k/sec
comes in 128mb and 256mb versions, i'll dig out a link in a sec
May be worth investing in a PocketPC, that way it is multifunctional, and can easily do things like this. You could also most likely get one for the same price.

The iPod records if you buy the Belkin microphone accessory.
The Archos jukebox recorder does recording and has a mic socket (along with an inbuilt one).
