Does anyone know how many amps the 8800GT uses compaired to my X1900XT. I have a feeling it may be less.
Also, if a card can use PCI-e 2.0 will still run in a normal PCI-e slot?

yes it will run in a PCI-e slot, no idea on the amps though.
Heres is a chart I ripped off of tomshardware.com
Its got the typical power draw of the latest cards in both idle and load scenarios:
As you can see, the 8800GT scores the best in its class with a max draw of 227watts which works out around 19amps at max draw.
The X1900 series cards were around the same power useage , if not slightly higher, with a 30amp 12v rail reccomended so I would assume that if you had an X1900 in your rig you would be able to swap it out with the 8800GT and not have to upgrade your PSU

I use a 720W Enermax Infinity so I am thinking it should be able to handle it with no problems.

The requirements for a 512mb 8800gt are something like 26A on 12V rail with a minimum of about 425W from memory (which would be for the whole system).
You could run 8800GTX x2 in SLi and not come anywhere near having an issue with that power supply.
