You can remove them in add/remove programs in control pannel, which completly removes them, i think.
I uninstalled my old nVidia drivers (MX400) from Add/Remove in Control Panel, then installed Catalysts 3.10. Working fine for me!

I did a format when moving from nVidia to ATi, it was the only safe way imho.
I did it using Add/Remove programs and then ran DriverCleaner before installing the new ATI drivers. My 9600XT Lite came with the sticker, and it looks great, it says "Fuelled By ATI"
So I remove it using Add/Remove Programs, don't restart or anything, run DriverCleaner, turn off PC, install ATi card and install ATi drivers as normal?
That's how I did it, but never ran DriverCleaner, but it looks right to me.
Ill tell you exactly how I did it.
Firstly, I downloaded the latest ATI drivers 4.2 (4.1 at the time). I then downloaded Driver Cleaner 2. Then I went to add/remove programs, uninstalled all the nVidia drivers.
I then opened Driver Cleaner 2, on the Options drop down list there’s a wizard, it lets u select which ATI drivers you want to remove, select the drivers you currently have, and then click clean.
Then I turned off my computer, removed my GFX card, put in my new 9600XT, turned my computer on, and then installed the ATI drivers I downloaded earlier.
And everything works fine.

Download the latest ATI drivers (4.2 at the moment)

Download Driver cleaner (And then install)
http://www.driverheaven.net/cleaner/
Turn off PC (Remove Nvidia, install ATI card)
Go into Safe-mode
Go into Control panel add\remove
Remove all references to nvidia video drivers
Then Windows will say it need to restart PC and ask's you to press O.K.
(Dont do this just move the window out of the way)
Now run Driver cleaner
Remove anything to do with ATI
Remove all Nvidia too (Except for nforce)
Restart PC
Windows will say found new video controller press NO and then it will come up again press NO again.
Install the Catalyst 4.2 drivers
Then when it says restart PC press YES
You should be all set to play games at much faster speeds ;)
