I don't know were you are reading reviews but almost every article I read compares the image quality between ATI & Nvidia at some stage.

Far Cry is good game for comparison. You can see shader model differences between ATI 2.0b and NV 3.0

Generally there is VERY little difference in image quality between different manufacturers at the same settings, just that some of them perform better allowing you to increase the image quality settings.
