I've just gotten an XFX 6800GS Extreme Edition which runs fine (not tried to clock it yet) but is really noisy.
Has anyone got any recommendations for making it quieter e.g Zalman VF700 or Arctic NV Silencer 5. Which would be best?

Try fiddling with the fan control to see if it makes any odds. Gainwards Expertool works pretty well on nvidia cards:

Often just setting the fan down 10-20% will really quieten a fan while giving you pretty minimal temp increases.
If you still want to replace the stock cooler I'd go with the Arctic cooler as it helps with system cooling slightly. Its really down to personal preference though as both do a good job.
Download and install Rivatuner.
Has a great feature where you can adjust the fan speeds for 2D and when gaming.
My 6800GT is set so that the fan speed is at 25% (lowest) but as soon at it reaches 80oC (Gaming), the fan speed increases to 50%.
As soon as the temperature falls to 80oC, the fan speed drops back down to 25%.
Try it before spending money on a new heatsink.
Put a Zalman V700 CU on it. Superb VGA cooler and very very very quiet!!
I would also recommend controlling the fan speed through software over changing the cooler. I *think* that software fan control, or even speed control (such as having a seperate 2d and 3d mode) is usually within warrenty. Changing the cooler usually isn't.
Change the fan. Do it carefully and it will be ok.
From experience I'd recommend the Arctic Cooler, it's great, and the best thing (apart from the fact that it works and works quietly) is that it expells air out of your case rather than recirculating it inside.
Overclockers don't have one in stock at the moment, but is a great deal for £14 (second from the bottom).
In stock, Komplett have the Aluminium / Copper fan which people say is good, for £16.
I generally really like Zalman stuff, but I think getting the hot air out of the case is important. You can then still use the utilities as mentioned above (I use RivaTuner with my Arctic Cooler)
I got a 6800GS yesterday, stuck rivatuner on, fans silent in windows now, ramps up in games, but you dont notice it with the sound from the game your playing.
Damn good overclocker too 520/1250 so far on the stock cooler.
