No contest.
The 6800XT is a crippled card, with lower speeds and less pipelines than a regular 6800.
The 7600GS would, in general, beat a 6800.
So from a gaming perspective, the 7600GS wins.
Also because of newer technology (ie 90nm manufacturing process) the 7600GS will consume lower power (thats speculation on my part based on other cards).
The 7600GS will also (most likely) be passively cooled, which is important for a media centre PC (ie no noise).
The only other point is price. The 6800XT can be got for £52 whereas the other is £70. Spend the extra. It's worth it.
That's assuming that you want a PCI-Express card, as I am not aware of the 7600GS being AGP (yet).

7600GS For sure, 6800XT is lower than even a 6800GS.
Ironically XT=lower end for Nvidia and higher end for ATi
Will the 7600 be able to handle H.264? I've heard some cards cant run H.264 formats.
and how does the 7600 shape up against X1600XT DDR2?

Moreover, it appears that you need a minimum core clock speed to run it well, and the 7600 series have higher core clocks than many other cards. The 7600GT is better, but the GS should be good enough, and will at least help out with h.264.
Don't mistake this for HDCP though - the 7600 series cards are very good (I have one) but are not truely compatible (in the way they ought to be) with next-gen DVD content.
