Faster and more cache.
They also have unlocked multipliers, so overclocking can be made easier, and the processor can be pushed further. (on the downside, the power requirements are slightly higher even before OCing).
that it ? doesn't seem much for such a hefty price difference
no, it doesn't.
Now days price doesn't scale comparatively with performance (and hasn't for a very long time tbh). Mainly because there are a lot of people now who will pay a hefty price tag for a "the best" and there are a lot more people who actually can, mainly due to the price drop of most technology these days.
It's basically become like the clothing market. A jacket from primark and one from versace both keep you warm and quite often look almost identical, but one is slightly better and has that precious versace label. A high end CPU will perform slightly better(with as little as 200mhz between mid-range and high end often), but one has that "Extreme" tag.
Hell if you have the money why not, but 99% of the time you'd be better off with a mid range chip overclocked, even if not the performance difference might look good on a bar graph but in the actual use of the machine you wouldn't be able to tell the difference.
