Win7 Audio issues headset/5.1 help!

Sorry if this comes out wrong i am SO stressed now with windows 7 64bit i have had nothing but problems since using it! but to get to my now new problem (which BTW was NOT a problem yesterday go figure..)

I use a 5.1 setup, 5 speakers 1 sub, works perfectly, i also use a stereo headset, which also works perfectly....but here is my problem, i would connect the headset, but open the audio config and select my 5.1 speakers as the default audio device...but the apply button will not appear anymore? so i click ok, and low and behold it is STILL stuck on the damn headset! ive tried reinstalling the audio drivers but it still wont work....this was working only yesterday! anyone got any ideas or am i really going to have to go back to windows 32 bit? yes this is that important to me.

I only wish it was that simple thing is...how can it just suddenly happen...after it has been working for so long?

Well... clearly something has changed: my money is on an update to something. Tried system restore to a time prior to the issue?
