Install Virtualbox, then install Server 2008 in Virtualbox.

Problem solved, and you don't have to dual boot either.

Just to bolster what Splash has said.
I have 3 virtual 2008 machines running in virtual box for when I read my MS books for Active Directory.
(1 full 2008 with AD, 1 core 2008 and 1 just for fun). All run quite nicely on minimal ram. Definitely not a production environment, but certainly lets me play with the principles of 2008 AD etc.

Virtualbox just takes care of the drivers as everything is virtual ;-)
