Generally speaking, software will ask you where you want to install it during the setup process.
Normally that would be C:\Program Files (or C:\Program Files (x86) if you have a 64-bit OS and 32-bit software). If you change it to D: E: F: or whatever your HDD is registered as, it will install them there.
E:\Software for instance would do the trick.
I'm guessing that some software doesn't ask where you want to install it, and will just default to C:\Program Files, never offering you the choice. I don't think there's a lot you can do about that.
If you wanted to shift Program Files wholesale over to another drive, I doubt there's any good way of doing it. I'm sure it's possible, one way or another, but I wouldn't recommend it, it's a fairly integral part of the OS's function.
The other thing to mention is that if your OS install goes away, say you buy a new SSD, you will probably have to reinstall all of the software. The files installed might still be on the HDD, but all of the information regarding DLLs, registry etc won't be on the SSD and therefore the installs won't work.
symbolic links is a great way to shift an instlaled programs folder to a hard drive.

the only links I've done were to the same drive - just used it as a shortcut to similar content saved in another place.
I didn't mind about the loss of space so hadn't checked this out- but it would be silly if it took space from both drives!
