Partitioning a new Hard Drive

Hello. I've aquired a new 250 gig Hard Drive and the software that comes with it says I can divide it up into partitions but doesn't really explain why. I'm just wondering what the benefits are over just 1 big drive and whether to do it or not because it can't be changed without losing everything. Thanks.
